Types of Binh Phuoc salted roasted cashew nuts
Binh Phuoc province, the region of basalt red soil, has the largest cashew growing area in the country. After every occasion of Lunar New Year, a cashew nut harvest begins in this place. The atmosphere is bustling everywhere in vast cashew fields. People are excited to pick and collect cashew nuts. Separated raw (old) cashew nuts will be collected and sun-dried. After that, the process of splitting and peeling silk shell is carried out to produce white cashew nuts. Binh Phuoc salted roasted cashew nuts are considered a delicious specialty, often bought by customers as gifts for their relatives and partners every Tet or served as snacks for families.

Cashew nuts are usually divided into two main types, in shell and without shell. Cashew nuts in shell (raw cashew nuts) are divided into nearly 40 different types, depending on their color, burntness level, intactness or breakage level of cashew nuts according to AFI standards. Common cashew nut standards are ww240 (whole white cashew nuts 240), ww320, ww450, WS, etc. After roasting, cashew nuts in shell are usually classified as A, B, type 1, type 2. This standard is introduced by each manufacturer based on its size analyzer, and not a general standard.
